Shrimp Salad With Honey Jalapeño Dressing

What I like about this salad is it’s spiciness that comes from the dressing and Pico De Gallo.
Shrimp Salad With Honey Jalapeño Dressing
Servings: 2 people
Ingredients
For salad
- 600 g shrimps or 15 large shrimps
- 1 tbsp olive oil
- 200 g salad mix that you prefer
- 1/2 cup canned red beans
- 1/2 cup canned corn
- 1 cup pico de gallo
- 1 large avocado
- 1 tsp salt
- 1 tsp pepper
For dressing
- 2 cloves garlic
- 1.5 cups sour cream
- 1 jalapeno fresh or pickled
- 1 tbsp honey
- 2 tbsp cilantro
- 3 tbsp lime juice
Instructions
- Add olive oil to a large skillet and heat. Season the shrimp with salt and pepper and saute until fully cooked for about 4-5 minutes.
- Fill two bowls with mixed greens. Add the corns, beans, pico de gallo and avocado on top.
- Mince the garlic, jalapeno and cilantro. Then make the full dressing by combining them with sour cream, honey and lime juice.
- Put the shrimps on the salad and drizzle the dressing on top.
