Cowboy Caviar
Ingredients
For the salad:
- 1 can black beans
- 200 g canned corn
- 200 g cherry tomatoes
- 1 red bell pepper
- 1 red onion
- 30 g cilantro
- 1 fresh jalapeno
- 2 avocados
- 1 lime
For the dressing:
- 1/3 cup olive oil
- 2-3 cloves garlic
- 1 tsp salt or to taste
- 1 tsp dried oregano
- 1/2 tsp dried basil
- 1 tsp maple syrup or honey
- 1 tsp pepper or to taste
Instructions
- Cut cherry tomatoes into quarters, red bell pepper, onions and fresh jalapeno into cubes.
- Chop or mince your cilantro and cut avocados into cubes.
- Put all the cut veggies in a bowl and add canned corn with black beans.
