Cowboy Caviar

Ingredients

For the salad:

  • 1 can black beans
  • 200 g canned corn
  • 200 g cherry tomatoes
  • 1 red bell pepper
  • 1 red onion
  • 30 g cilantro
  • 1 fresh jalapeno
  • 2 avocados
  • 1 lime

For the dressing:

  • 1/3 cup olive oil
  • 2-3 cloves garlic
  • 1 tsp salt or to taste
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1 tsp maple syrup or honey
  • 1 tsp pepper or to taste

Instructions

  • Cut cherry tomatoes into quarters, red bell pepper, onions and fresh jalapeno into cubes.
  • Chop or mince your cilantro and cut avocados into cubes.
  • Put all the cut veggies in a bowl and add canned corn with black beans.
  • Squeeze the juices of 1 lime into the same bowl.
  • To make the dressing mix olive oil, minced garlic, salt, dried oregano, dried basil, maple syrup and pepper.
  • Add dressing to the bowl and mix everything up with a spoon.
  • Enjoy the salad with tortilla chips or on its own.

Notes

Tip: You can use the leftovers of Cowboy Caviar for burritos the next day. Just add your favorite meat, rice, and enjoy another delicious dish!
