For the salad:

For the dressing:

Instructions
Cut cherry tomatoes into quarters, red bell pepper, onions and fresh jalapeno into cubes.
Chop or mince your cilantro and cut avocados into cubes.
Put all the cut veggies in a bowl and add canned corn with black beans.
Squeeze the juices of 1 lime into the same bowl.
To make the dressing mix olive oil, minced garlic, salt, dried oregano, dried basil, maple syrup and pepper.
Add dressing to the bowl and mix everything up with a spoon.
Enjoy the salad with tortilla chips or on its own.
Notes
Tip: You can use the leftovers of Cowboy Caviar for burritos the next day. Just add your favorite meat, rice, and enjoy another delicious dish!
