In a small bowl, whisk together the vegetable oil, soy sauce, apple vinegar, fresh lemon juice, Worcestershire sauce, Dijon mustard, minced garlic, and black pepper.
Place your pork in a dish or a large resealable plastic bag.
Pour the marinade over the pork. Put the pork skin up.
Seal the bag or cover the dish with plastic wrap or lid, and refrigerate for at least 2 hours or overnight.
When you're ready to cook the pork, remove it from the marinade and discard any excess marinade.
Grill, bake, or pan-sear the pork until cooked through.
