Tomato Feta Pasta With a Twist

Ingredients

  • 250 g cherry tomatoes
  • 1 pack feta cheese
  • 3 garlics 10-15 cloves
  • 1 chilli pepper
  • 5-6 fresh basil leaves
  • 1/2 cup olive oil
  • 1.5 tsp salt
  • 1.5 tsp pepper
  • 200-250 g pasta

Instructions

  • Preheat your oven to 180 °C.
  • Add the cherry tomatoes to the baking dish together with peeled garlic cloves.
  • Cut the chili pepper and fresh basil. Add them to the dish too.
  • Cut the feta cheese into cubes and add it to the baking dish as well. 
  • Season everything with salt and pepper.
  • Pour the olive oil and mix everything well.
  • Put the baking dish in the oven. Roast everything for about 15-20 minutes until they are soft and slightly caramelized.
  • While the tomatoes are roasting, prepare the pasta according to the package instructions. Cook until al dente, then drain and set aside.
  • Once the ingredients and pasta are cooked just blend them together until everything is combined.
  • Serve the tomato feta pasta warm. You can garnish it with some extra basil leaves and a drizzle of olive oil, if desired.

Notes

Add a little olive oil to the pot where you boil your pasta. That way the pasta won't stick together!
