Chickpea Tahini Salad

Ingredients

For the salad

  • 1 romaine lettuce
  • 1 red bell pepper
  • 1 red onion small
  • 250 g cherry tomatoes
  • 1/2 English cucumber
  • 250 g canned chickpeas
  • 1 avocado
  • 20 g cilantro
  • 1 tsp oregano

For the tahini dressing

  • 1 tbsp tahini
  • 2 tbsp lemon juice
  • 1 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tbsp roasted sesame oil
  • 1 clove crushed garlic
  • 2 tbsp water
  • 2-2.5 tsp salt taste before adding more
  • 2-2.5 tsp pepper taste before adding more

Instructions

  • Cut romaine lettuce, red bell pepper, red onion cherry tomatoes, English cucumber, avocado, cilantro and oregano and put into a salad bowl.
  • Add canned chickpeas. Don't forget to drain the liquid from the can before adding the chickpeas.
  • Prepare the dressing by mixing tahini, lemon juice, honey, rice vinegar, roasted sesame oil, crushed garlic, water, salt and pepper.
  • Pour the dressing over the salad and mix everything well. Enjoy!
