Chop the parsley and avocado, add to a bowl. To the same bowl add greek yogurt, lemon juice, salt and garlic powder.
To another bowl add tomatoes, lemon juice, basil, salt and pepper.
Cut zucchinis into stripes. Beat two eggs in a bowl. In another bowl add breadcrumbs, salt, pepper, smoked paprika and mix together.
Take a piece of zucchini and roll it in breadcrumbs, then egg mixture and then breadcrumbs again. Do this with all of the zucchini sticks.
Add zucchini sticks to the air fryer and cook each side for 5 minutes on 200°C
